Prepare the Peach Purée: In a blender, combine the thawed peaches, honey (if using), and fresh lemon juice. Blend until smooth and well combined. This creates the flavorful base of your Bellini.
Strain for Smoothness: Pour the blended mixture through a fine-mesh sieve into a bowl or measuring cup. Use a spoon to press the purée through, discarding any remaining pulp. This ensures a smooth and refined texture.
Divide the Purée: Evenly distribute the peach purée between two champagne flutes. Fill each glass about one-third full, leaving room for the sparkling wine.
Add the Sparkling Wine: Slowly pour prosecco or sparkling wine into each flute. Pour gently down the side of the glass to prevent excessive foaming and overflow.
