Cook the Ramen Noodles:
Bring a pot of water to a boil.
Add ramen noodles and cook as per the package instructions (usually around 3 minutes).
Drain and set aside. Be careful not to overcook them to avoid mushy noodles.
Prepare the Sauce:
In a small bowl, mix soy sauce, water, and brown sugar (or honey). Stir until combined.
Sauté Aromatics:
Heat oil in a nonstick pan or wok over medium heat.
Add the white parts of the green onions and minced garlic.
Stir for about 30 seconds until fragrant.
Sprinkle red chili flakes and mix for another 10 seconds to release the flavors.
Cook the Sauce:
Pour the soy sauce mixture into the pan.
Let it simmer for 1-2 minutes until slightly thickened.
Combine Noodles & Sauce:
Add the drained ramen noodles to the pan.
Toss gently to coat evenly with the sauce.
Let the noodles simmer for another minute, absorbing all the flavors.
Garnish & Serve:
Sprinkle sesame seeds and the chopped green parts of the scallions.
Serve immediately while hot.
